TURKEY QUINOA CHILI

This chili came together on accident but it was sure a delicious accident! I was getting ready to make my Tone It Up tray bake when I open the fridge and find ALL my veggies had gone bad!! So I had to improvise. I had some leftover various beans, ground turkey and some leftover quinoa ... so I decided to throw it all together in a pot and see what happened! And the verdict was delicious that even my picky husband loved! Here is the recipe below...


d i r e c t i o n s :
1. In a large pot, pour a little olive oil and add the ground turkey, onion, garlic, red and green bell peppers. Cook + stir until the turkey is no longer pink. About 5 minutes

2. Next, add all of the canned ingredients, add salt and pepper to taste and stir it all together. 

3. Cook on low + covered for about 15-20 minutes stirring occasionally and letting all the ingredient mix together.

4. Lastly, serve it up in bowls and if you want add some avocado or greek yogurt to the top!

i n g r e d i e n t s :
organic ground turkey
1 red onion (roughly chopped)
2 cloves garlic (minced)
1 red bell pepper (diced)
1 green bell pepper (diced)
1 can of pinto beans
can of black beans
1 can of red kidney beans
1 can of chickpeas
1 can of diced tomatoes
salt + pepper to taste
avocado (optional)
lain greek yogurt (optional)

 

 

 


As you can see, this recipe is so easy and takes no time at all ... perfect for those busy nights. You can also cook this in a crockpot by just sticking everything in there all at once and just cook on low for a few hours. Now, I haven't tried this in the crockpot, so I am not sure how it will turn out, but I know it can work ... just keep an eye on it so it doesn't burn.
